Rack of Lamb

The Frenched Rack of Lamb, with the “baker’s hat”-esque paper truffles, is an iconic sight in restaurants and at dinner tables around the world.

The rack of lamb is the prime cut, made up of a whole section of 7 – 8 ribs (individually called lamb cutlets).

Tender and full of flavour, the rack is best suited to roasting or baking, and is often served with a crust of herbs and breadcrumbs.

Crown Racks and Guards of Honour

A fantastic centrepiece for even the most lavish of occasions, the Crown Rack consists two racks tied together to give the appearance of a crown.
Its partner, the Guard Of Honour, also uses two racks, but interlaces the ribs to form an arch.

In both cases, the cut is skinned, chined and “frenched”, where the meat and fat is removed from the protruding bones, for a clean and elegant appearance, and the paper truffles applied.
