A flavoursome cut taken from the shoulder, lamb shank had fallen out of fashion until fairly recently.
Requiring slow cooking in a moist heat (such as braising and stewing) to tenderise the meat and soften the layer of fat and fell that covers the piece. The extra time is worth it for meat that falls off the bone and melts in your mouth.
Unlike other products, we sell lamb shanks individually, rather than by weight; with one large shank enough per person.
Alternatively, removing the generous amount of meat from a shank (this is easiest done when the meat is cooked) and stewing with winter veg will yield a hearty family meal.
