Lamb Shoulder
Slightly tougher than other cuts of lamb, shoulder is a less expensive meat that is still incredibly flavoursome.
The key to serving delicious lamb shoulder is long, slow cooking under a low, moist heat, such as pot roasts (if using the whole joint) or casseroles and Lancashire Hotpot.
